What is Dodo IS?

At the heart of our network is the Dodo IS pizzeria management system, which covers every aspect of our business. We develop Dodo IS in-house so that it meets our specific needs and aligns with our processes.

All processes in the pizzeria have been digitized. Dodo IS covers every stage: from order taking to delivery, from supply chain and production management to managing the pizzeria network based on data analytics.

Online sales channels. Full control over the customer experience. Our app, website, self-service kiosk, and POS terminals with automated marketing personalization send orders directly to the kitchen.

Accessible via a browser. Dodo IS is a cloud-based system, which means you don’t need to install anything to use it. All features are accessible through a standard browser — all you need is a username and password. Additionally, the devices used to log in to the system, as well as cash registers and TV boards, are connected via the internet.

How does Dodo IS work?

The customer places an order via the app, website, call center, cash register, or kiosk. The order is immediately sent to the kitchen tablet — there’s no need to dictate or write anything down. The pizza maker receives a notification, marks the order, and begins preparing it.
At every stage — rolling out the dough, filling, baking, and packaging — the order is tracked on tablets until it reaches the dining area or is sent out for delivery. If the order needs to be delivered, it appears in the courier’s app.
The courier picks up the order, checks the items, and sets off. The app maps out the route, provides directions, allows the courier to contact the customer, and reminds them of the standards for handing over the order.
After delivery, the courier marks it as complete in the app — the system records the exact time and adds it to the statistics. It’s not possible to mark it as complete early: Dodo IS tracks the courier’s location.

Once back at the pizzeria, the delivery driver checks in and is placed in the queue for the next order.

By the way, after receiving their order, customers can rate it in the app. Both the pizzeria staff and office managers see the review immediately — this allows them to respond more quickly and improve the customer experience.

Is that all? Not at all!

Dodo IS does more than just track and monitor the order flow. The system also helps improve inventory management, plan purchases, and analyze write-offs.

The system analyzes sales data from the past three weeks. Based on this data, it notifies the shift manager when a sales peak is expected.
Dodo IS helps manage labor costs. Managers add employees, set hourly rates and bonuses, create work schedules, and analyze sales forecasts. Based on this information, the system can suggest how many employees should be scheduled for a shift at a specific time.
Dodo IS manages menus, prices, promotions, combo deals, and TV boards in pizzerias across the country.
By processing such a large volume of business data every day, Dodo IS also serves as a vital analytical tool. It offers a wide range of reports and dashboards featuring various metrics on every aspect of the business — from repeat orders to product popularity and preparation times.

The journey of ingredients at Dodo IS

Let’s say a new ingredient has been added to the menu — for example, shrimp. In Dodo IS, you create it in the «Raw material type» section and specify the measurements, such as: one measuring cup = 64 g.

Then you add the supplier and the type of packaging, such as a 500 g package, so the system understands the delivery quantities. When a new batch arrives, the inventory levels are automatically updated.

Recipes specify the required amount of the ingredient — for example, 1.5 cups of shrimp for the Seafood pizza. The system automatically calculates that this is 96 g and deducts it from the inventory when the item is sold.
When writing off inventory, the system works the same way — it subtracts the written-off quantity. Data on each ingredient is compiled in Dodo IS into a raw material consumption report. From this report, you can see how much of each ingredient was consumed during the month, how much went into production, and how much was written off.

You can also conduct an audit — compare the actual inventory balance with the data in the system.

Knowledge base in Dodo IS

Dodo IS stores not only order data but also best practices for every aspect of running a pizzeria: kitchen operations, cleaning, food prep, baking, customer service, and staff management. If an employee forgets something, they can quickly access a standard procedure without interrupting their workflow to remind themselves of the correct steps to follow.

Reliable

The reliability of Dodo IS is one of the system’s key strengths for businesses. That is why the Dodo Engineering team places special emphasis on system stability.

In 2023, the peak number of orders per minute was 510, in 2024 — 835 worldwide, and in 2025 — 1,040!

To ensure a quick response to unexpected changes in load, the development department has monitors that display all key metrics of the Dodo IS servers in real time.
